Place the wild rice in a medium saucepan, cover with plenty of water, bring to the boil and then reduce tp a gentle simmer for 35 minutes until the rise is cooked but still firm. Drain, rinse under cold water and set aside to dry.
Mix the basmati rise with 1 tablespoon of olive oil and 1/2 teaspoon of salt. Place in a medium saucepan with 330ml of boiling water, cover and cook on the lowest possible heat for 15 min. Remove from the heat, place a tea towel over the pan, replace the lid and set aside for 10min. Then uncover and allow to cool down completely.
Bring a small saucepan of water to the boil and add the quinoa. Cook for 9 min, then drain in a fine sieve, refresh under cold water and set aside.
Place the almonds and pine nuts in a small pa with 1 tablespoon of olive oil and a pinch of salt. Cook on a medium-low heat for about 5 min, stirring frequently. Transfer to a small plate as soon as the pine nuts begin to colour and set aside.
Heat the sunflower oil in a large frying pan and add the onions, along with 1/4 teaspoon of salt and some black pepper. Cook on a high heat for 5-8 min, stirring often, so that parts of the onion get crisp and others just soft. Transfer to kitchen paper to drain.
Place all the grains in a large mixing bowl along with the chopped herbs and rocket, freid onions, nuts and sour cherries. Add the lemon juice, zest, remaining olive oil, garlic, 1/2 teaspoon of salt and some pepper. Mix well and set aside for at least 10 min before serving.

Se pune orezul salbatic într-o crati?a medie, se acopera cu multa apa, se aduce la punctul de fierbere ?i apoi se reduce la un foc mic timp de 35 de minute, pâna când este gatit, dar este înca ferm. Se scurge, se spala sub get de apa rece si se pune deoparte sa se usuce.
Se amesteca orezul Basmati cu o lingura de ulei de masline ?i 1/2 linguri?a de sare. Se pune într-o crati?a medie cu 330 ml de apa clocotita, se acopera ?i se fierbe la foc mic timp de 15 minute. Indepartati de la foc, pune?i un prosop peste tigaie ?i puneti deoparte timp de 10 minute. Apoi descoperiti ?i se lasa sa se raceasca complet.
Se aduce o mica oala de apa la fierbere ?i se adauga quinoa. Gatiti timp de 9 minute, apoi se scurge într-o sita fina, se reîmprospateaza sub apa rece ?i se pune deoparte.
Se pun migdale ?i nuci de pin într-o tigaie mica cu 1 lingura de ulei de masline si un varf de cutit de sare. Gatiti la foc mediu-scazut timp de aproximativ 5 minute, amestecand frecvent. Se transfera într-o mica farfurie, cât de curând nucile de pin incep sa se coloreze si se pun deoparte.
Se încalze?te uleiul de floarea-soarelui într-o tigaie mare si se adauga ceapa, impreuna cu 1/4 linguri?a de sare ?i piper negru. Gatiti la foc mare timp de 5-8 minute, amestecand des. Se transfera pe hârtie de bucatarie pentru a se scurge.
Se pun toate boabele într-un bol mare cu ierburi tocate ?i rocket, ceapa prajita, nuci ?i vi?ine. Se adauga sucul de lamaie, coaja rasa, restul de ulei de masline, usturoi, 1/2 linguri?a de sare ?i piper. Se amesteca bine ?i se pune deoparte pentru cel pu?in 10 minute înainte de servire.
