For bread to rise you need between 80 F - 100 F. to much heat will start the bread to bake. It will develop a surface crust. When rising bread rise it should double in size. Be sure not to let the bread rise more than double because the dough will loose strength and collapse from the excess gas . This will cause the dough to loose all the gas and flavor that you have generated .
NATURAL METHOD:
If it is late spring or summer and the temperature is at least 75F- 80F outside. I cover the dough in a Bowl with a thick towel. Place the dough in the garage on a table or the hood of the car. It will rise wonderfully.
HEAT BLANKET METHOD.
Place a thick blanket on the counter or tabletop. Place the heating blanket on top of the blanket. Place the covered bowl on top of the heating blanket. Wrap the bowl with a blanket and let rise.
PROOF BOX:
Using a igloo cooler, Cambro or and oven. ( Do not use your oven unless you have a double oven because you will need to preheat the oven to bake the bread.)
Boil a pot of water on the stove. Place the bowel of dough in the box or cooler. Place a small bowel in the box and pour the boiling water in the bowel. Close the lid and let rise. You do not need to cover the the dough becasue this is basically like a proofer in a bakery where the moist heat keeps the dough from dryng out.
I prefer this method because the moisture from the heat aids in the bread rising and eliminates a skin from forming on the dough.
