Preheat oven to 375 degrees. Coat a 9x13 inch baking pan with nonstick cooking spray. Combine cracker crumbs and salad dressing mix in a large zip-top bag. Add chicken 2 pieces at a time and shake in crumb mixture to coat. Place crumb-covered chicken in a prepared baking pan. Dot top of chicken with butter. Bake 1 hour.
