Turkey should be BRINED a day or two in advance.
Preheat the oven to 325 degrees F. Remove the bird from brine and rinse inside and out with cold water. Discard the brine.
Line a roasting pan with foil.
Place the bird on roasting rack inside a roasting pan and pat dry with paper towels.
Chop rosemary leaves and combine with butter.
With your hand, work the rosemary rub up under the skin across the breasts and upper legs, trying not to rear the skin. Spread it out as evenly as possible.
Combine the apple, onion, cinnamon stick, and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey's cavity along with the rosemary and sage. Tuck the wings underneath the bird and coat the skin liberally with canola oil.
Roast at 325 on lowest rack in oven, for the time indicated in the table below.
About 2/3 of the way through, or when the skin begins to brown, cover turkey with foil to prevent burning.
Your turkey is done when the temperature with a meat thermometer is 180° F in thigh and 165° F in breast. Remove from oven and let sit covered 15 minutes before carving.
Gather drippings from roasting pan, separating and discarding some (but not all) of the fat. Place drippings in skillet, blend with a little flour using a whisk, and bring to a boil to make gravy.
