This may sound like a lot of garlic, but after roasting it adds a mild nutty flavor and isn't the least big overwhelming. Best served with assorted crackers, red pepper strips and snow peas.
Position rack in lowest third of oven and preheat to 300F. Place garlic in small baking dish and toss with oil. Bake until garlic is soft and golden, about 30 minutes.
Transfer to blender and let cool about 30 minutes.
Add worcestershire sauce and mustard to garlic and blend until garlic is finely chopped. Scrape mixture into large bowl. Stir in almonds, sour cream, mayo, and herbs. Season with salt and pepper. Cover and refrigerate at least 2 hours or overnight to mellow the flavors. Let stand at room temperature for 1 hour before serving.
