Suggest a better descriptionPeel away dry layer of skin from head of garlic. Cut off the pointed tips about 1/4 inch to expose individual cloves.
Place the garlic head cut side up in a small baking dish. Drizzle with olive oil.
Bake for 20-40 minutes at 400 until soft and golden. allow to cool and remove soft roasted garlic form the inside.
Peel potatoes and quarter; cover with water in large pot.
Bring to boil and simmer until tender, about 15 minutes.
Drain the potatoes and return to the hot pot and mash.
Mash in the roasted garlic. Mix in butter, milk, salt and pepper.
Beat to desired consistency.
Can be transfered to baking dish and topped with 1/2 cup grated parmesan cheese and baked 15 minutes at 400.
