Suggest a better descriptionPre-heat oven to 350 degF. Lay the whole garlic head on its side, carefully cut the very top off. Once cut, look at the top and make sure all garlic pods have had the very top cut off, trim any tops that were missed. Repeat for 2nd head of garlic. Place cut garlic head in the middle of a 12" long piece of aluminum foil, lightly sprinkle a little olive oil on top of the garlic pods then sprinkle a dash of salt and pepper. Gently fold the foil around the garlic head and squeeze the top closed. Place in oven, cook for 45 minutes. Set aside and let cool.
Place potato cubes in 8-10 qt pot and cover with 2 inches water, add 2 tablespoons salt. Bring to a boil and let simmer for 15-20 minutes or until very tender, drain in colander.
While potatoes are boiling, remove garlic heads from foil, turn upside down and squeeze out garlic pods onto a plate. Place roasted garlic pods in the stand mixer bowl with room temperature butter. Sprinkle a teaspoon of salt and pepper in mixer bowl, turn on mixer and slowly increase speed to high. Let mix for 2 minutes to break up the garlic and mix well with butter. Once potatoes are boiled and drained, pour into stand mixer bowl with butter/garlic mixture. Turn mixer on lowest speed and let mix for 1 minute until the potatoes have broken up well, increase speed to medium/high for 1-2 minutes until potatoes are broken up and smooth. Mix longer if desired. Once the potatoes are smooth, lower mixer speed to low and start adding half & half cream 1/4 cup at a time mixing well after each addition until the potatoes are the consistency you desire (You likely will not use all of the cream). Taste potatoes and adjust salt and pepper to your taste, mix well after each addition.
