Preheat oven to 450. Spread grapes on a sheet pan and drizzle with 1 tablespoon olive oil. Sprinkle with salt. Lay thyme sprigs over top and toss everything gently together with your hands. Place the pan in the oven and after 7 minutes remove some of the grapes before they burst then return remaining grapes to the over for 2 more minutes or until grapes just begin to burst. Discard thyme sprigs.
Heat a grill pan to medium high and brush bread with remaining olive oil and grill until toasted.
To assemble first put ricotta then top with grapes
