Simple, no-fuss roasted recipe
Cut peeled potatoes into even cubes/chunks, about 2" cubed. Boil potatoes in salted water until their surface is slightly soft. Remove potatoes from water and 'rough up' either by shaking in drained pot or by using a fork to rake the surface of each potato. Meanwhile, heat the olive oil in a roasting pan in a 400* oven. Season the lamb shanks with lamb herbs, salt and pepper. Position the potatoes and lamb in the heated oil in the pan and spray the potatoes with the olive oil spray. Turn potatoes every 20 minutes and cook for one hour total; turn lamb shank after 30 minutes and cook for 45-60 minutes total, depending on size. Serve immediately.
