Smooth icing for cookies
Mix sugar and cream of tartar, then add egg whites on low speed until combined. Increase mixer to high and beat 1-2 more minutes (in humid climates it is more like 4-5 minutes) until icing is a crisp white and very very thick. Add flavoring to taste.
This texture is used as "glue" for gingerbread houses etc. thinned, this recipe will ice about 100 cookies
Separate about 1 cup of icing into another bowl and color with your choice of gel or paste icing (using a spoon to stir in the coloring).
Then thin the 1 cup of icing, using a spoon to stir in the appropriate amount of water:
- for outlining, add 1/2 to 3/4 tsp of water to the one cups of icing (it should fall from the spoon in "blobs").
- for top coating a cookie, add 1 1/2 to 2 1/2 tsp of water to the thick icing, this is a little thicker than "flooding" consistency and does not need a border. This should flow relatively solo off the spoon and tracks in the icing disappear in about 15 seconds.
- for flooding, add 2 to 3 tsp water to the thick icing. This consistency requires an outline to keep the icing from running off the edge of the cookie. The icing will flow quickly off the spoon a and tracks will disappear in about 10 seconds or less. NOTE: change out vanilla flavoring for your favorite flavor. i.e. Lemon, almond, peppermint, etc.
