Sometimes these are referred to as Mexican Wedding Cakes, but whoever says that is incorrect...at least by my standards since I'm biased having grown up with the original name. The cookies are balls of dough with nuts inside and covered in powered sugar. They're a traditional Christmas Cookie that look like snow balls.
Heat oven to 400°F. Mix thoroughly butter, sugar and vanilla. Mix in salt. Add flour and nuts. Mix until dough holds together. Shape dough into 1-inch balls. Place on ungreased cookie sheet.
Bake 10-12 minutes or until set but not brown. While warm, roll in powdered sugar. Cool. Roll in powdered sugar again.
