1. In a large bowl, sprinkle the yeast onto warm water. Add sugar and salt and let sit for 10 minutes, until it foams.
2. Add olive oil and flour and knead for about 10 minutes.
3. Place dough in a well-oiled bowl, turning a few times so that dough surfaces are protected by oil. Tightly cover the bowl with saran wrap. Place in a warm, draft-free area until dough is doubled (1-2 hours).
4. After it has doubled, gently punch it down again and shape it into the loaf. Make a criss-cross design on top. Place on a greased baking sheet, cover, and let sit for another hour.
5. After it has doubled again, gently brush with olive oil, sprinkle with salt and rosemary. Try not to deflate.
6. Bake at 375*F for 25-30 min. Spray once during the middle of baking with water. Bump up to 425*F and spray the loaf with water again. Bake until the top is light golden brown.
7. Let rest for 5 minutes before cutting into it.
