My daughter made this for a company-meal, and it was fabulous. (Carrots in a fruit salad...who knew?) Use fresh fruit for this. If something's not in season or is unavailable, make a substitution, but don't use canned or frozen. Preparation time includes slicing and dicing.
Combine fruits and carrots in a large bowl. Whisk or blend together lemon juice, powdered sugar, and mint. Pour over fruit and toss gently.
