(Instead, can fry the paneer without the spices and then add the spices to the spinach mixture later. Or, can choose to not fry the paneer at all).
- Cut the paneer into bite sized chunks.
- In a bowl, mix the paneer pieces with 1/2 teaspoon turmeric, 1/2 teaspoon chili powder, and teaspoon of salt.
- In a non-stick pot, heat 2 tablespoons oil.
- When hot, add in paneer and fry on one side until golden brown, then flip and repeat on opposite side.
- Remove with slotted spoon.
2. Cook onions and garlic:
- Chop 1 medium onion roughly.
- Mince 4 cloves garlic and mix with ginger powder.
- In the same oil as cooked the paneer, fry the onions and garlic.
- Once translucent, mix in 1 tsp cumin powder and chopped green chili.
- Fry ~5 minutes until mixture turns deep golden brown.
3. Prepare spinach:
- Mix in frozen spinach and look cook another 5 minutes.
- Once thoroughly defrosted in the pot, add half a cup of hot water.
- Dice the tomato and add.
- Mix with hand blender to blend into a smooth, creamy mixture.
- Once smooth, add 2 teaspoons garam masala.
- Add in the fried paneer pieces.
- Lower heat and simmer to 10 minutes until the water dries up and the spices have thoroughly penetrated the spinach.
- Add salt.
- Optionally, can add some cream or milk or yogurt.
- Serve with roti or naan and/or yogurt.
