1. Put the vulgar wheat in a bowl and pour over enough bowling water to just cover it. Cover the bowl tightly and leave to soak for 15 minutes.
2. Tip the bulgar wheat into a sieve and run it under the cold tap to cool. Drain well.
3. Stir the parsley, tomato and shallots to the bulgar and dress with the lemon juice and olive oil.
4. Taste for the seasoning and adjust with the sea salt and black pepper.
