Dans une casserole, mélanger le quinoa, le jus de pomme et l'eau. Porter à ébulition à feu vif. Réduire à feu moyen-doux, couvrir et laisser 10 min. Retirer du feu et laisser reposer 5 min. Laisser refroidir avant de l'ajouter à la salade.
Dans un grand bol, mélanger le vinaigre, le sirop d'érable et la moutarde. Poivrer généreusement et ajouter une pincée de sel. Verser l'huile en filet en fouettant vigoureusement pour créer une émulsion.
Ajouter les pommes à la vinaigrette. Ajouter le reste des ingrédients, mélanger.
