1) Peel & roast whole beets wrapped in foil in oven at 350 deg for ~1 hr
(garlic cloves can be added in foil with beets!)
Best made in individual salad bowls:
2) Fill bowl with arugula
3) Add cubed beets, avocado, goat cheese, asparagus
4) In teacup, mix 1 Tbs honey and equal amounts of balsamic vinegar & olive oil.
Add salt & peppa, stir.
5) Pour dressing over salad and serve.
