Suggest a better descriptionMelt half of the butter in a frying pan over a medium heat. When bubbling, carefully lay in the salmon fillets. Cook the fish for about 8 minutes, turning regularly.
While the fish is cooking, melt the remaining butter in another pan over a medium to high heat. When bubbling, check in the mushrooms and stir-fry for 2 minutes - try to get a little colour on them. Add the garlic and fry for 1 minute before pouring in i tablespoon of water and the creme fraiche. Work the creme fraiche in the pan until it melts, then reduce the heat a little so that the sauce is just simmering away.
Add the spinach and let it wilt into the creamy sauce. Sprinkle in the chopped herbs and the cheddar. again stirring everything together to help melt the cheese.
By now your fish should be cooked through - you can check this by slicing into the thick end of a fillet to make sure the flesh has turned matt pink in colour. Plate up the salmon and pour over the mushroom sauce.
Serve up with a squeeze of fresh lemon juice.
