I wash the tomatoes, then I slip the skins in a pot of boiling water; about 45 sec.;
Cut the tomatoes in 1/2 & squeeze excess liquid from the tomato.
I cut the onions, peppers & jalapenos in the blender to get them into finer pieces.
Cut tomatoes into quarters & put in the blender if you don't like chunks; then put in a large pot. Add the remaining ingredients.
Bring to a boil & simmer -- light boil for about 1 hour.
Stir often until thickened.
Skim off excess juice if there is any left to skim.
Water bath quart jars for 20 mins. and pint jars for 15 mins.
