Preheat oven to 350 degrees.
Combine nuts on parchment lined sheet pan, roast for 7 min. Set aside to cool.
After nuts are cooled, place sugar and 1/4 cup water in medium fry pan and mix with fork until sugar is moistened. Cook over medium heat until the sugar melts - don’t stir, instead swirl the pan. The mixture may look as if it’s crystallizing. Continue to cook for 5-10 min, until the mixture becomes a clear golden brown, swirling pan constantly at the end. Take off heat, quickly add vanilla and swirl pan to combine. Working quickly, add the nuts and kosher salt and toss with 2 large spoons until nuts are completely coated.
Pour the nuts and extra caramel in the pan onto a sheet pan lined with parchment. Spread nuts in single layer, pulling apart with two forks. When completely cooled, carefully break into large clusters with your hands.
