Once sausage is browned, drain the meat and then add garlic and roasted red peppers. Cook the two ingredients and meat until fragrant, about 15 seconds. Then add chopped broccoli, salt, and 1/2 cup of water, cover the skillet and cook on high heat until broccoli turns bright green, about two minutes. Then uncover the skillet and continue cooking on medium heat for another 5 miutes.
Once the noodles are done boiling, drain the pasta and add the olive oil.
Combine the pasta with the skillet ingredients. Mix the Romano cheese into the skillet and serve immediately.
The meat and veggies cook pretty quickly so make sure to get the pasta going early in order for everything to be finished in time. I can never find orechiette pasta so I just use medium shells instead. When combining the pasta and cheesse, you might have to transfer all ingredients to a bigger bowl, depending on the size of your skillet.
