Modified from another recipe to bolster the flavor significantly! I cannot overemphasize the importance of buying the best quality ingredients available. Especially the sage breakfast sausage. I promise you, cheap sausage WILL impact this recipe. Nothing less than Jimmy Dean. And use fresh ground nutmeg but don’t overdo it or it overpowers the other ingredients. Oh my my my...
Brown the onions in a little olive until translucent and starting to caramelize. Crumble and brown the sausage completely. When the sausage is about half way cooked, add the poultry seasoning, sage and nutmeg. Adding it now will help the flavors release. Add flour around the cooked sausage and allow to cook on medium heat for 3-4 minutes, stirring constantly. Flour will stick to the bottom but it will not burn as long as you keep it moving. The goal is to cook out the flour taste and toast it juuuust a touch. Slowly begin to add the milk while stirring constantly to prevent clumping and scraping the flour from the bottoms and sides. Continue adding milk to your desired thickness. I’ve found that about 16-24 ounces is more than enough because I like my gravy very meaty. Add the salt, worchestershire and hot sauce to taste. Stir everything well and serve warm over your favorite biscuits. Gravy is actually better reheated the next day with a little milk after the flavors have married overnight!
