1) Beat Eggs in Bowl
2) Stir in Kale and Ricotta cheese
3) Heat 1/4 tbsp. oil in pan over medium heat.
4) Add Sausage and cook until brown on all sides
5) Drizzle remaining oil and pour Egg mixture over.
6) Cook about 2 minutes per side.
7) Serve sprinkled with fresh parsley.
