Suggest a better descriptionPreheat oven to 375 F. Slice the stem off of the pumpkin, cut it in half. Scoop out the seeds and insides. Use a knife to cut out the stemmy areas inside.
In a large skillet, saute the sausage until cooked thoroughly. Remove from pan and place on paper towels to drain. Leaving only 1 TB of sausage fat in the pan, add onion and saute for about 5 minutes. Add the greens to the pan and saute for another 5 to 10 minutes until the greens and onions are soft. Place onions and greens into a large bowl. Add drained sausage. Stir to combine.
Place the pumpkin halves in a rimmed baking dish. Fill each pumpkin half with half of the sausage mixture. Add 1 cup of water to the pan.
Place in oven and bake for 1 hour. Let sit 10 minutes before serving. Cut each pumpkin half in half for four servings.
