Chunky mix of boiled potatoes and onions with sage and onion flavor, topped by grilled bacon.
Place the potatoes and onions in a large pan with enough water to just cover. Bring to the boil, turn down the heat and simmer until the potatoes are just a little short of being cooked. Carefully drain the water into a heat proof container and then return 500mls of the water back into pan with the potatoes and onions. Gently stir through the stuffing mix trying not to break up the potatoes too much - if a little dry, add more of the potato/onion water until well moistened. Turn potato mixture into a baking pan or dish, top with the Rasheed of bacon and cook in a hot oven (200 degrees) until the bacon is cooked to your preference. Serve with roasted tomatoes.
