This is a more unusual salad, but my coworkers & I have come to love it! Once the spring & summer weather arrives I crave this salad. It's a great, super simple summer salad & is something unique to bring to the table. Enjoy!
Seed & peel melon and cut into large chunks. FINELY chop the chili pepper & be sure to remove all seeds and ribs. In a large bowl, mix the melon, chili pepper, lime juice and zest together. Season w/ salt and pepper & there you have it!
