Suggest a better descriptionPreheat the oven to 350°F (180°C, or gas mark 4). Grease an ovenproof pan.
Heat the oil in a stovetop pan, and sauté the garlic and onion over medium heat for 2 to 3 minutes. Add the curry powder and apricots and cook together for another 1 to 2 minutes. Remove the mixture from the pan and place in a large bowl.
Add the honey, vinegar, and almond flour to the bowl and combine. Finally, add the ground pork, and mix thoroughly until combined.
Make small patties out of the pork and place them in the ovenproof pan. Bake for 25 to 30 minutes. Halfway through the baking time, flip the patties over for even cooking.
Remove from the oven and drain on a plate lined with paper towels. YIELD: 4 to 6 servings
