Grate cold butter into flour
(Optional: let flour butter combo sit in freezer 10 mins)
Blend/whisk egg and milk together until slightly foamy
Mix lightly liquid and dry ingredients
Work it on a clean table or countertop to begin gluten development
Keep folding dough in half and rolling to half an inch until dough feels strong but not overworked
You can roll it out into any shape depending on how you cut the pieces
Last roll should be about half an inch thick
Cut out pieces using a knife, bench scraper, biscuit cutter, etc.
Brush milk on scones, sprinkle turbinado sugar
Bake at 400F for 15-20 mins depending on how dark you want them to get
Let cool for 20 mins before eating
