Suggest a better descriptionRinse the clams and place in a small bowl. Cover with cold water and allow them to sit for one hour. Do the same with the mussels. Drain the claim and the mussels. Heat a medium sized pot and add one tablespoon on olive oil. Add the claims and 1/4 cup of wine. Bring to a boil, cover, and simmer about eight minutes, until the claims open. Drain into a colander, reserving the broth.
Heat the pot again and cook the mussels as above, using the remaining oil and wine, but only for five minutes. Drain into a colander, reserving the broth. Remove the claim and mussel meat from the shells and set aside, covered. Discard the shells. Pour the broth through one strainer and into one bowl.
Roll the scallops and shrimp in the flour and pat off the excess flour. Melt the butter in a large frying pan and briefly sauté the scallops and shrimp for one minute. Add the reserved broth to the pan along with the cream and the saffron. Bring to a simmer and cook, uncovered, to reduce and thicken slightly, about five minutes. Return all the seafood to the pan and simmer one to two minutes. DO NOT OVERCOOK! Add salt and white pepper to taste.
Serve with pasta.
Add steamed lobster tail meat if it's Valentine's Day or something.
