Prepare the sauce:
cover garlic with lemon juice and let sit 10 minutes. Add 1 T. olive oil, yogurt, tahini and stir until smooth, adding water if necessary to desired thickness.
Prepare the nuts:
lightly toast the pistachios and lightly crush.
same with pine nuts.
Do this separately because they will toast in different times.
Combine toasted and crushed nuts.
Prepare the fruit:
place fruits in small bowl; cover with hot water. Wait 10 minutes; drain well. Toss with 1 T. olive oil and fresh minced cilantro.
Prepare the marinade:
Grate the yellow onion (it will make a lot of onion juice). Combine with 1 T. olive oil, tomato paste, water, coarsely ground cumin seeds.
TO COOK:
Marinate the chicken breasts in the tomato paste mixture for 10 minutes (or longer?). Remove breasts, shake off marinade and pat lightly with paper towels to remove more marinade. SAUTE in a hot pan with olive oil until cooked through, about 5 minutes each side.
TO SERVE:
place tahini sauce on place; cover with cooked chicken; top with fruit and nuts; top with a little more sauce.
pat the chicken dry before frying or else the tomato starts to burn before the chicken is cooked.
