Made daily at the US Senate with Michigan Navy Beans since the 1900's.
Wash and sort beans. In a large pan, combine beans and 8 cups of water. Bring to a boil and simmer 1 minutes. Remove from heat cover and let stand 1 hour. Do not drain.
Add ham bone, salt, pepper and bay leaf. Cover and simmer 3 hours or until beans are tender.
Add 2 cups water and onion. Simmer 30 minutes.
Remove ham bone and cut off any meat pieces to be added to soup.
Add ham pieces, smash beans gently to thicken if desired. Season with salt and pepper.
