Veggie meal
Preheat oven to 450 F
1 Cut sweet potatoes into 1/4 inch rounds. Add 1 tablespoon Olive Oil and season with salt and pepper. Bake for 20-25 min and flip half way
2 In large pan add 1 tablespoon olive oil and heat. When hot add chili-cumin spice blend and cook for 30 sec. Stir in beans with liquid, Crushed tomatoes and half salsa. Bring to boil, reduce heat and cook 8-10 min until thickened
3 Cut tomato into small pieces, Slice green onions. Cut avocado into 1/2 pieces . In medium bowl mix tomatoes and avocado and season with salt and pepper.
4 Remove sweet potatoes and set oven to broil. Sprinkle cheese over potatoes then broil for 2-3 min until cheese melted
5 Top Sweet potato with black bean mixture and avocado mixture. Sprinkle with remaining cheese and green onions. Add sour cream and salsa mixture
