Cheesy potatoes, perfect for a cookout at home or a cold winter day

Cook potatoes in the jackets and cool. When potatoes are cool, peel and grate them into a buttered 13x9 casserole dish.
To make the cheese sauce: in a medium saucepan combine the extra sharp cheese, milk, whipping cream, dry mustard and pepper (to taste). Cook over low to medium heat until the cheese is melted and forms a smooth sauce. Pour the cheese sauce evenly over the grated potatoes. Sprinkle the cracker crumbs evenly over the casserole of potatoes. Sprinkle lightly with paprika, for color.
Bake the potatoes at 350 degrees for 1 hour.
