Easy dish, great for company when you don't have a lot of time.
Heat oven to 450. Drizzle the baking dish with the olive oil and garlic and place in hot oven for 2 minutes, then remove. In a medium bowl, toss the shrimp and artichokes together. Add to baking dish. Sprinkle with mozzarella cheese and bake 7-10 minutes if the shrimp are already cooked, or for 25 minutes if the shrimp are raw. The cheese should be bubbly and golden. Sprinkle with the Parmesan and a squeeze of lemon and serve.
Got this recipe from a Christopher Lowell cookbook years ago. It's a great dish.
