Heat 1/2 tablespoon of butter in a medium saucepan over medium heat. Add garlic and cook until fragrant about 30 to 60 seconds. Add broth and bring to s boil over high heat. While stirring constantly pour in grits and 1/4 tsp salt. Reduce heat to low, cover and cook, stirring occasionally, until grits are thickened, 15-20 mins. Stir in cheese and 1/4 tsp hot sauce. Session to taste with salt and pepper. Cover and set aside in warm spot.
Heat 1 tbsp butter in 12" skillet over med-high heat. Add asparagus, sprinkle with salt and cook, stirring frequently, until crisp-tender and browned, about 3-4 mins. Add shrimp and cook until opaque and asparagus is tender, about 2-3 mins. Add tomato. Reduce heat to low. Add Worchestershire sauce and remaining hot sauce. Melt remaining 2 1/2 tbsp butter into shrimp/asparagus. Season to taste. Serve over grits and garnish with scallions.
