2. Bring 2 cups of water to boil in a small saucepan over medium-high heat or in microwave.
3. Meanwhile, heat 2 tablespoons olive oil for 10-15 seconds in medium-size saucepan over medium-high heat. Add rice and sauté, stirring, about 1 minute. Stir in boiling water and salt. Cover, reduce heat, and simmer 20 minutes, or until all liquid has been absorbed. Set aside and keep warm.
4. Grate enough orange rind to measure ½ cup. Squeeze enough oranges to measure ¾ cup juice and limes to measure 3 tablespoons.
5. Using a colander, rinse and drain beans. Line platter with paper towels and turn beans onto platter. Blot dry with additional paper towels.
6. Peel and crush garlic clove. Trim scallions; wash, pat dry and chop. Set aside.
7. Preheat broiler. Grease medium-size roasting pan with olive oil or butter.
8. In a small bowl, beat curry powder and 1 teaspoon pepper sauce until blended. Add egg and beat thoroughly. Place bread crumbs in a separate small bowl.
9. Dip shrimp first in egg mixture, then in bread crumbs, coating each shrimp evenly. Arrange in a single layer in greased roasting pan, leaving space between them.
10. Drizzle breaded shrimp with 2 tablespoons olive oil and dot with 6 tablespoons butter.
11. Broil shrimp, turning once, about 7 minutes, or until cooked through and golden.
12. While shrimp are broiling, heat plater under running water. Drain and dry.
13. Transfer shrimp to warm platter and cover loosely with foil to keep warm.
14. Place roasting pan on range top over low heat. Add orange and lime juices orange rind, honey and ½ teaspoon hot pepper sauce, cilantro, and salt to taste. Stir, scraping bottom of pan to incorporate drippings into sauce. Add remaining olive oil and butter to taste.
15. Heat 1 tablespoon olive oil in medium-size skillet. Add garlic and scallions and sauté, stirring, 10-15 seconds. Add beans and sauté, gently turning and stirring, 3 minutes, or until beans are heated through.
16. Fluff rice lightly with fork and turn into serving bowl. Add beans and toss gently to combine.
17. Arrange shrimp in center of platter and surround with ring of Rice and Beans. Serve Cilantro Citrus Sauce on the side.
