Peel and chop carrots and sweet potatoes into small chunks, keep onion separate from other veg.
Wash coriander, remove leaves from stalks and chop both separately.
Boil water and add stock cube then stir in milk.
Sweat onions and coriander stalks until soft.
Add carrots and sweet potatoes then add stock and milk mixture.
Bring to the boil then simmer for 15 minutes.
Add some of the leaves and blend.
Garnish with coriander.
