This makes a single loaf. To double, do NOT double the yeast! It's a really nice, simple bread. Sometimes, I'll add in herbs and use it to make my own dressing bread crumbs. Sometimes I'll swap a cup of bread flour for a cup of wheat flour.

Add yeast to warm water and allow to bloom, about 5 minutes.
Add salt and sugar to flour, stir.
Add oil and yeast & water.
Mix and knead for 10 minutes until elastic, like playdoh, and not sticky. Add flour as needed if sticky, add water if it's crumbly.
Using the Bosch mixer, I let mix for 7 minutes and then check to see if it's too sticky or dry then dust with a bit of flour or add a teaspoon of water. Mix to incorporate then test again.
While mixing, oil a bowl for rising. Set a kettle on to boil.
After mixing, place dough in bowl, turning once to coat with oil. Place in over with the light on and set a pan of the boiling water on the rack below. Allow to rise until doubled, about an hour.
Oil the baking pan.
Take the dough out, punch down, shape into a loaf and place in the pan. Replace the water in the pan with fresh, place the dough in the loaf pan in to rise until doubled.
Turn the oven on to 350 degrees and bake for 40 minutes, checking after 30.
I bake in cast iron loaf pans now. Love how well it browns the sides and bottom!
