Whisk together dry ingredients in a large bowl.
In a separate bowl, whisk together wet ingredients.
Pour the wet ingredients into the dry and mix with a rubber spatula until combined.
Butter an iron skillet and put in the oven to melt. Once melted, take the skillet out and coat the sides with the butter. Pour the remaining butter into the batter.
Bake about 25 minutes, or until until the sides pull away from the pan.
