Simple, but delicious, beef and vegetable stew which can be used as a base for other ingredients or to create other meat-based stews.
1. Mix cubes of beef, flour, salt, pepper and oregano until the beef is fully coated with dry ingredients.
2. Heat 3 Tbsp of olive oil. when hot, sear the beef mixture until browned on most sides (does not to be fully cooked through.
3. Remove beef from frying pan and add to slow-cooker, and leave remains from cooking. Add onion and garlic to the frying pan with additional Tbsp of olive oil. Saute until the onion is yellowed, then add balsamic vinegar, stir for a few seconds and add the tomato paste until the paste is heated and fully mixed.
4. Add the onion/tomato paste mixture to slow-cooker along with potatoes and remaining vegetables and beef broth. If the beef/veggie mixture is not covered in the slow-cooker, add water.
5. Cook on low heat for 6-8 hours (or high heat 4-5 hours) until the meat is tender and the potatoes and carrots are cooked through.
6. About thirty minutes before serving, mix cornstarch and cold water in separate container. Once fully mixed add to the stew for thickening.
You can simply add all of the ingredients to skip the first four steps. However, the first four steps will add more flavor as well as create a more tender and flavorful beef.
If you prefer a soupier stew you can skip step 6.
Adding water to cover all ingredients iif the beef broth doesn't cover them will ensure all your vegetables will cook well and the beef will be tender.
This stew can be made in a 6.5 qt. slow-cooker, but the ingredients will be tight and may leak a bit, so I'd suggest 7.5-8 qt.
