1. Brown ground beef and onions. Drain.
2. Add taco seasoning, tomatoes with green chilies and black beans to beef and onions.
3. Spray slow cooker with cooking spray or olive oil.
4. Add 1/3 of ground beef mixture to slow cooker.
5. Lay tortillas on top. (If needed, tear off pieces of tortilla and use it to fill in any spaces You'll want the tortillas to come all the way to the edge and the ground beef mixture to be covered.)
6. Next add 1/3 of each of the classes.
7. Repeat layers twice.
8. End with ground beef mixture and cheese.
9. Cover and cook on low for 3-4 hours.
10. Cut into 8 wedges. Top each wedge with sour cream, if desired.
