quick and easy, make ahead and microwave before serving
Place whole potatoes, skin on, in pot of salted water. Water should cover potatoes by about 1 1/2 inches.
Bring to boil and cook until potatoes can be pierced through with a fork (about 20 minutes).
While potatoes are cooking, heat butter and milk together until butter is melted. Keep warm.
Drain cooked potatoes and immediately place back into pot. On low heat, dry out the potatoes.
Turn off heat under potatoes and mash with potato masher until pretty smooth. Then add milk and butter mixture. Stir well.
Add salt and pepper to taste.
Serve immediately, or cover and refrigerate until use. When microwaving later, you may add some milk to keep moist.
I use 3/4 cup skim milk, 3/4 cup half & half.
