Suggest a better descriptionTo begin, place the smoked salmon in a food processor and blend until smooth. Turn down to a slower speed and gradually add the double cream until fully combined. Season with a pinch of salt and cracked pepper. Refrigerate for one hour for the mix to firm up slightly.
Peel the cucumber and dice into small cubes. Drain a handful of capers and heat a small frying pan with a splash of oil. When hot, fry off the capers until crispy and drain on a paper towel. Toast the rye bread and allow to cool slightly before taking a scoop of the salmon mousse and placing on top.
Garnish with the cucumber and lemon slices and sprinkle over the capers
