Corn Chowder with Bacon
Cook bacon and discard all but 2 TBL of grease ( 8 mins)
Remove bacon and set aside
Cook onion in grease (5-7 mins)
Add garlic, paprika & red pepper flakes (2 mins)
Stir in corn, broth, half & half and bring to boil
Reduce heat & simmer 15 mins
Remove 1/2 of soup and purée & return to pot
Salt & pepper and add scallions
