oatmeal cookies with a pumpkin twist
Preheat oven to 350 degrees F.
Line cookie sheets with parchment paper.
In large bowl, cream together margarine, molasses and brown sugar until light and fluffy.
Beat in eggs.
Sift flour, baking soda, salt, and cinnamon into sugar mixture.
Beat into egg mixture.
Beat in oats.
Add pumpkin and mix together.
Fold in desired amount of dark chocolate chips, starting with 1/2 cup.
Place a heaping tablespoon of dough on parchment lined cookie sheets.
Bake in preheated oven for 5 minutes, turn cookie sheet around and cook another 2-5 minutes. Take out when light brown around edges. Let sit one minute. Put on cooling racks. Store in an air tight container.
