1) Pulse bread in food processor and then transfer to a bowl
2) Dry shrimp and pulse shrimp in food processor about 7 pulses. Transfer to a separate bowl
3) Combine mayo, scallions, parsley, lemon zest, cayenne, salt and pepper in large bowl. Fold in shrimp until combined
4) Sprinkle bread crumbs over mixture and fold until combined
5) Divide shrimp mixture into 4 equal parts and shape into 1 inch patties
6) Cover and refrigerate patties for 30 minutes or up to 3 hrs
7) Clean and oil cooking grate on grill
8) Lightly brush tops of patties with oil, lay them on grill, oiled side down, and lightly brush other side with oil
9) Cook burgers, without pressing on them until lightly browned and register 140-145 degrees (10-14 min), flipping halfway
10) Transfer to platter, tent loosely with foil, and let rest for 5 min before serving
Serve with tartar sauce and lemon juice
