Transfer roast to cutting board, tent and rest 20 min. Let braising liquid settle for 4 min, remove fat, stir in ciantro, season w/ S&P
Remove twine from roasts, slilce into 1/2-inch thick slices and arrange. Spoon 1 cup suace over meat and serve w/ remaining sauce
