Spaghetti Sauce my modified version of what Amy Richards provided

Brown the Italian suasage.
In large skillet and under medium heat saute onions in olive oil for 10 minutes +/-, add garlic and saute an additional 2 minutes, add additional olive oil to help cook and avoid burning. Then add the mushrooms & peppers and saute an additional 5-10 minutes.
In a 5qt pot combine all cans of tomato's, basil, oregano, sugar, black pepper, salt, red wine and browned sausage. Cook under low heat for 1-2 hours, being sure to stir often.
Finish with the Parmesan cheese and stir until the cheese has melted.
Makes 5 quarts.
