Crispy freeze-dried apple chips are the inspiration for this pork loin roast recipe. The crushed apple chip powder lends a touch of sweetness that balances the heat of the chipotle chile powder. If you do not care for spicy foods, the chipotle may be omitted with equally satisfying results.
Let pork loin roast come to room temperature. Preheat oven to 400 F. Line a shallow roasting pan with nonstick foil.
Whisk the Worcestershire sauce and honey together. Massage this mixture over the exterior surfaces of the pork.
Combine paprika, onion powder, chipotle powder, garlic powder, and salt with the back of a large spoon until well-blended. Whisk in crushed apple powder. Sprinkle this seasoning mixture over the outside of the pork roast. Place pork in the prepared pan, fat-side up.
Bake for 1 to 1-1/2 hours until internal temperature reaches 150 F. with an instant-read meat thermometer">thermometer. Remove from oven and tent with foil. Let rest for 10 minutes before slicing. Serve with a side of applesauce as a condiment, if desired.
Notes:
• I have used boneless pork loin for the roast, not pork tenderloin. The tenderloin is the filet mignon of the pig. It is a long, skinny piece of meat. The pork loin is the the uncut, round portion of bone-in pork chops (not blade chops). However, you may use this recipe with pork tenderloin, but will probably need to cut the roasting time in half, if not more. Use your instant-read thermometer.
• Freeze-dried apple chip snack packs are readily available in most large grocery stores and health food markets. Do not confuse them with the soft or hard dehydrated apple chips. You need the ones that are crisp, like regular (not kettle) potato chips. I used a brand called Brothers All Natural Fuji Apple Crisps sold in a 6-pack box. They are described as "light and crispy, real sliced fruit, no skins." I was able to put them in a zip-top bag and easy crush them into a powder with a rolling pin. Depending on which brand you are able to find, you may need to use your food processor to crush them. I used 3 snack packs of these plain apple chips to make about 1/2 cup of apple powder. If you like cinnamon-flavored apple chips, these will also work, but will obviously add a cinnamon flavor to the pork.
• You might also want to experiment with other flavors of freeze-dried fruit chips, such as mango or pineapple. These two particular flavors would be good on chicken. For chicken breasts, reduce roasting time to 30 minutes. For chicken thighs and legs, reduce oven temperature to 375 F. and roasting time to 45 to 60 minutes.
• This recipe is easily doubled for a larger roast. You will need to reduce the oven temperature to 375 F. and increase the roasting time accordingly. Use the instant-read thermometer to check the internal temperature and increase the resting time to 15 minutes.
