Just a simple little pasta that's easy to throw together on a weeknight for a quick dinner.
Begin by setting up your pot you will use to boil your pasta in with salted water so you are all ready to go when we get to that point.
In a large sauce pan over medium heat, add your olive oil, ground sausage, onions and garlic. This will need to saute for 10 minutes until sausage is fully cooked. Once the sausage is done, de-glaze the pan by adding you wine, string the pan to get all that flavor up off the pan from cooking your sausage and aromatics.
Once the Alcohol has cooked off (30-60 seconds), you can now add your tomatoes and herbs to the pan and stir together. Once you have done this, leave your sauce to simmer and add your pasta into your boiling salted water. Cook your pasta for 8-10 minutes or until pasta is al dent.
Drain your pasta and add into the pan with your tomato and sausage mixture. Stir to completely incorporate your ingredients. If the dish appears dry and unable to stir easily, Add back in some of your pasta water from boiling your pasta. Continue to simmer pasta in the sauce for 3-5 minutes.
When ready to serve, stir in your mozzarella cheese to incorporate it with the pasta. You are ready to go! Serve on a plate with grated Parmesan and chopped parsley as a garnish. I love to serve this dish with some simple steamed broccoli
